Most temperature controllers have quite a few parameters which can be set by the user.

One such parameter is the Deadband.

If the temperature set point is 125 degrees , as in your case , then once the controller switches off its output ( when the actual temperature has exceeded the setpoint ) , then the controller output will come on again when the actual temperature has gone below the ( setpoint - deadband ). If the deadband in your controller is 3 degrees , then certainly the controller output will come on again when the temperature falls below 122 degrees.

Another set of parameters are the P , I and D values. Depending on these values , the controller output may go off before the setpoint is reached , so as to minimize overshoot.

Some of the more sophisticated controllers have what is called AUTOTUNE. When this is made on , the controller tunes itself to the process , so as to identify the appropriate values of P , I and D.

If you give the model number of your controller , probably we can get more information from the Internet.
